Greek Chicken Pasta Salad
- 12 oz small shell pasta
- 1/4 cup fresh oregano, coarsely chopped
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 3 cups shredded cooked chicken
- 1 medium red onion, thinly sliced
- 1 lb cherry tomatoes, quartered
- 1 small cucumbers, coarsely chopped
- 1 large green pepper, coarsely chopped
- 1 cup pitted black olives
- 1 jar (10 oz) marinated artichoke hearts, drained and coarsely chopped
- 7 oz feta cheese, coarsely chopped
- Cook pasta in large saucepan of boiling water according to package directions; drain. Rinse under cold water; drain.
- Meanwhile, for the dressing, whisk 2 tbsp of the oregano, oil and lemon juice in small bowl.
- Place pasta in large bowl with remaining ingredients. Drizzle with dressing; toss gently to combine.
- Top salad with remaining oregano.
