Spaghetti With Smoked Salmon, Tomatoes And Peppers

  1. Cook the spaghetti in a large pot of boiling salted water according to the package instructions.
  2. Meanwhile, heat the oil in a frying pan and fry the Padron peppers over high heat until just tender and blistered. Remove with a slotted spoon and set aside. Add the onion to the frying pan and saute for 5-6 mins then add the tomatoes and cook for an additional 2-3 mins until just softened, stirring in the salmon after 1 minute.
  3. Drain the spaghetti and add to the frying pan along with the Padron peppers. Season to taste. Serve in warmed pasta bowls, sprinkled with dill and drizzled with lemon oil.
