Tropical Fruit Bombes

  1. Blend or process chopped mangoes and granulated sugar until smooth.
  2. Place ice cream in a large bowl; stir with a wooden spoon until just softened. Swirl mango puree and 1/2 cup of the nuts through ice cream. Spoon into eight 1-cup molds. Cover with foil and freeze overnight, or until firm.
  3. For the passion fruit sauce, place passion fruit pulp in a small bowl. Stir in remaining ingredients.
  4. Dip molds, one at a time, into a bowl of hot water for 1 second. Turn bombes onto serving plates. Drizzle with passion fruit sauce and decorate with sliced mango and remaining nuts.
