Duck, Bean Sprout And Cilantro Omelette
- 8 None large eggs
- 2 tsp sesame oil
- 1 lb barbecued duck meat, shredded
- 7 oz bean sprouts, trimmed
- 1/2 cup fresh cilantro leaves
- 4 None spring onions, finely sliced
- 4 tbsp vegetable oil
- None None plum sauce, to serve
- In a large bowl, whisk eggs, 1/3 cup water and sesame oil together until combined. Season to taste with white pepper.
- In a separate bowl, combine shredded duck meat, bean sprouts, cilantro and spring onions.
- Heat 1 tbsp oil in a large wok over medium heat. Pour 1/4 of egg mixture into wok, swirling to create an 8 inch circle. Cook for 1-2 mins, until base is golden. Slide out onto a serving plate, place 1/4 of filling onto 1/2 of omelette and fold over. Repeat with remaining oil, egg mixture and filling. Drizzle with plum sauce to serve.
