Zucchini And Meat Casserole
- 1 lb. ground meat (sausage, beef, turkey or venison)
- oil
- onion rings
- pepper rings
- zucchini
- spaghetti sauce
- salt
- pepper
- garlic powder
- oregano
- sweet basil
- rice or pasta
- grated Parmesan cheese
- Crumble and brown ground meat.
- Drain well and place in mixing bowl.
- In a small amount of oil brown onion rings and pepper rings.
- Drain well and mix with meat.
- Remove pulp and seeds from zucchini and chop or slice.
- Place in a small amount of oil and saute until just fork-tender.
- Drain dry.
- Add to other ingredients.
- Add spaghetti sauce to moisten.
- Also add salt, pepper, garlic powder, oregano and sweet basil to taste.
- Place in baking dish over rice or pasta.
- Sprinkle with grated Parmesan cheese over top.
- Bake at 350u0b0 for 30 minutes.
