Wintry Beet Soup
- 3 tbsp butter
- 1 1/3 lbs beets, peeled and diced
- 8 oz carrots, trimmed and chopped
- 8 oz potatoes, peeled and chopped
- 1 small onion, chopped
- 3/4 cup dry white wine
- 3 1/2 cups vegetable stock
- 6 tbsp creme fraiche
- 1-2 tbsp horseradish sauce
- 1 tbsp lemon juice
- Melt butter in a large saucepan on medium heat. Add beets, carrots, potatoes and onion and saute for 2-3 mins. Add wine and stock and bring to a boil. Reduce heat to low; cover and simmer for 15-20 mins, until the vegetables are soft.
- Mix creme fraiche, horseradish sauce and lemon juice in a small bowl. Season then set aside.
- Blend soup in a food processor, blender or using an immersion blender until smooth. Season. Divide soup among 4 bowls. Swirl in horseradish cream and serve.
