Wintry Beet Soup

  1. Melt butter in a large saucepan on medium heat. Add beets, carrots, potatoes and onion and saute for 2-3 mins. Add wine and stock and bring to a boil. Reduce heat to low; cover and simmer for 15-20 mins, until the vegetables are soft.
  2. Mix creme fraiche, horseradish sauce and lemon juice in a small bowl. Season then set aside.
  3. Blend soup in a food processor, blender or using an immersion blender until smooth. Season. Divide soup among 4 bowls. Swirl in horseradish cream and serve.
