Spicy Chicken Drumettes
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 2 tbsp honey
- 2 tbsp tomato paste
- 1 tbsp balsamic vinegar
- 2 cloves garlic, crushed
- 2 tsp finely grated lemon peel
- 1/4-1/2 tsp cayenne pepper
- 24 None chicken drummettes
- 1 None green onion
- Combine all the ingredients, except the chicken and green onion, in a large shallow dish. Add the chicken; stir until well coated in the marinade. Cover and refrigerate for 3 hours or overnight, stirring occasionally.
- Preheat the oven to 400u0b0F. Cut the green onion into long thin strips; place in a bowl of iced water.
- Place the drained chicken in a shallow baking dish. Roast, uncovered, for 35 mins or until cooked through, brushing with remaining marinade after 10 mins. Serve chicken topped with drained green onion.
