Roast Beef With Marsala Mushroom Sauce
- 1 (5 lb) beef bottom round roast
- 2 tbsp olive oil
- 3 tbsp savory spice rub
- 2 tbsp butter
- 10 oz cremini mushrooms, 1/2 quartered, 1/2 chopped
- 1/2 cup chopped onion
- 1/2 tbsp tomato paste
- 2 sprigs fresh parsley
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 None bay leaf
- 1/4 cup marsala
- 1 1/2 cups beef broth
- Preheat oven to 450u0b0F.
- Rub beef with oil and coat with spice rub. Place in a roasting pan and roast for 20 mins. Reduce oven to 325u0b0F and roast for 1 hour, or until a thermometer inserted in the thickest part reads 140u0b0F for medium rare, or until cooked to your liking. Cover with foil and let rest for 20 mins.
- In a large frying pan, melt butter over medium-high heat. Saute quartered mushrooms for 5 mins, or until light golden brown. Set aside. Saute chopped mushrooms and onion for 5 mins, or until light golden brown. Add tomato paste, herbs, marsala and beef broth. Bring to a boil then reduce heat and simmer for 10 mins. Pour pan juices into measuring cup and skim fat. Add pan juices to pan and simmer for 3 mins. Remove herbs. Season.
- Garnish roast beef with quartered mushrooms and serve with marsala mushroom sauce.
