Lime Gelatin, Pineapple, Cottage Cheese Salad

  1. Mix gelatin, using 2 cups boiling water, 1 1/3 cups cold water and 2/3 cup pineapple juice.
  2. Chill until consistency of unbeaten egg whites.
  3. Make Dream Whip topping according to package directions.
  4. Add chopped nuts, cottage cheese and salad dressing; mix well.
  5. Whip gelatin after it reaches appropriate consistency with electric mixer until broken up into pea size pieces.
  6. Add pineapple, minus 3 tablespoons, to whipped gelatin and stir together.
  7. Add whipped mixture and mix well.
  8. Pour into 2-quart Pyrex oblong glass dish sprayed with vegetable oil (like Pam). (Will also need another small dish as recipe makes a little more than fits in 2-quart dish.)
  9. Can top with sliced olives or pineapple pieces, if desired.
  10. Chill until firm.
  11. Serves 12 to 16.
