Pepper Steak(Chinese)
- 2 Tbsp. salad oil
- 1 lb. beef, cut into thin strips (sirloin or rib)
- 1 large green pepper, cut into thin strips
- 2 scallions, thinly sliced
- 1/2 c. diagonally sliced celery
- 1/4 c. molasses
- 2 Tbsp. soy sauce
- 1 tsp. lemon juice
- 1/2 tsp. hot red pepper sauce
- 1/2 tsp. salt
- 1 tsp. ginger
- 1/2 c. cold water
- 2 tsp. cornstarch
- In

- large skillet, heat oil.
- Add beef and cook over high heat, stirring frequently until browned, about 5 minutes. Add pepper,
- onion and celery.took 3 to 5 minutes, stirring frequently.
- Reduce
- heat;ttir in molasses, soy sauce, lemon juice,
- pepper
- sauce
- andteasonings.
- Blend water and cornstarch;
- quickly
- stirtnto
- beef
- mixture.
- Cover.
- Simmer 5 minutes.
- Serve with hot fluffy rice.
- Makes 4 servings.
