Asian Pork Patties With Noodle Salad
- 1 lb ground pork
- 1 cup finely chopped fresh cilantro leaves
- 2 None green onions, thinly sliced
- 1/2 cup dried breadcrumbs
- 2 tbsp red curry paste
- 2 tsp vegetable or peanut oil
- 7 oz rice vermicelli noodles
- 5 oz green beans, halved diagonally
- 1 None carrot, peeled and cut into matchsticks
- 1/4 cup sweet chili sauce
- 2 tsp apple cider vinegar
- Combine ground pork, 1 tbsp cilantro, green onions, breadcrumbs and curry paste. Season. Shape into 8 patties. Heat oil in a frying pan over moderate heat. Cook patties, turning every 1-2 mins, for 8 mins, or until browned and cooked to your liking. Transfer to a heatproof plate and cover with foil to keep warm.
- Meanwhile, place noodles and beans in a heatproof bowl. Cover with boiling water, stirring to separate strands. Let stand for 5 mins, or until noodles soften. Rinse under cold water and drain. Return to bowl along with carrot and remaining cilantro. Toss to combine.
- Whisk together chili sauce, 1 tbsp water and vinegar. Season. Drizzle 1/2 the dressing over noodle salad and toss to combine. Spoon noodle salad into serving bowls and top with patties. Serve with remaining sweet chili dressing.
