Baked Ziti With Ricotta And Sausage
- 5 Tbsp. butter
- 1/2 c. all-purpose flour
- 2 c. chicken stock, heated with 1 c. white wine
- 1 lb. Ricotta
- 1 c. freshly grated cheese (Romano, Parmesan, Asiago)
- 1 egg, lightly beaten
- 2 Tbsp. finely chopped fresh parsley
- 1 tsp. salt
- freshly ground black pepper
- 2 Tbsp. olive oil
- 2 links Italian sausage, casings removed and meat broken into small pieces
- 1/2 lb. ziti
- In a medium saucepan,
- melt 4 tablespoons of butter and add the flour.ttir and blend with a wire whisk and cook over medium heat for about

- minutes.
- Slowly

- and keep whisking.tllow the sauce to simmer for about 15

- a medium bowl, combine the Ricotta with

- Asiago cheese, beaten egg and 1 tablespoon parsley;

- salt and pepper to taste.
- Mix well and set aside.tn

- heat the oil and saute the sausage over
- medium-high
- heat for a few minutes or until done; set aside.
