Meatloaf Topped With Mashed Potatoes
- 1 lb ground beef
- 1 None onion, finely chopped
- 1 None carrot, grated
- 1 None egg, lightly beaten
- 2 oz fruit chutney, plus extra to serve
- 2 tsp Worcestershire sauce
- 1 tsp mixed dried herbs
- None None Mashed Potato Topping
- 1 1/2 lb potatoes, peeled, cut into chunks
- 2 tbsp milk
- 1 1/2 tbsp butter
- None None steamed green beans, to serve
- Preheat oven to 350u0b0F. Line an 8x4 inch loaf pan with foil.
- In a large bowl, combine ground beef, onion, carrot, egg, 2 tbsp chutney, Worcestershire sauce and herbs. Season. Place on a baking tray. Bake for 20 mins.
- Meanwhile, for the mashed potato topping, cook potatoes in boiling, salted water for 15-20 mins, until tender. Drain. Mash with milk and butter. Season.
- Remove meatloaf from pan. Place on a baking tray lined with parchment paper. Brush with remaining chutney. Top with mashed potatoes and bake for 10-15 mins, until golden. Serve sliced with steamed green beans and extra chutney.
