Spaghetti With Tomato, Tuna And Olive Sauce

  1. Heat olive oil in a frying pan. Saute onion and carrot for 5 mins. Add garlic and herbs. Cook for 2-3 mins. Add tomato paste and cook for 1-2 mins. Add tomato puree and bring to a boil. Reduce heat to low and simmer for 3 mins. Add olives and tuna. Simmer for 2-3 mins. Season.
  2. Meanwhile, cook pasta in boiling salted water until al dente. Drain then distribute between serving bowls. Spoon sauce over top. Garnish with fresh herbs and Parmesan.
