Apple And Vanilla Sponge Pudding
- 6 None Granny Smith apples, peeled, cored and cubed
- 1/2 cup sugar
- 2 None eggs
- 1 tsp vanilla bean paste
- 1/2 cup self-rising flour
- 1/2 tsp pumpkin pie spice
- None None Whipped cream, to serve
- Preheat the oven to 350u0b0F. Lightly grease a 6 cup baking dish.
- Place apples, 1/4 cup of the sugar and 2 tbsp water in a medium saucepan on medium heat. Cook and stir for 5-8 mins or until apples are tender. Drain excess liquid. Spoon apple into prepared dish.
- Beat eggs in a large bowl with an electric mixer on medium speed until fluffy. Add remaining 1/4 cup sugar, 1 tbsp at a time, beating until thick and creamy. Beat in vanilla. Sift flour and pumpkin pie spice over batter. Fold gently into the batter. Pour over hot apples.
- Bake for 25-30 mins or until a skewer comes out clean. Serve warm with whipped cream.
