Honey Baked Peaches With Praline And Mascarpone

  1. Preheat oven to 350u0b0F. Place peaches, cut-side up, on a baking sheet and drizzle with honey. Bake for 20-30 mins, until softened.
  2. Meanwhile, place almonds on a separate baking sheet and roast for 10 mins. Transfer to a clean baking sheet lined with parchment paper. Set aside.
  3. Combine mascarpone, cream and vanilla extract in small bowl. Chill until required.
  4. Place sugar and 1/4 cup water in a saucepan and bring to a boil. Simmer, swirling pan occasionally but not stirring, until sugar has dissolved and mixture is light golden brown, about 15-20 mins. Quickly remove from heat.
  5. Immediately pour hot toffee over roasted almonds, coating evenly. Allow praline to cool and harden.
  6. Place praline in food processor and blend to a breadcrumb consistency. Spoon into the center of each peach half. Arrange 3 peach halves per plate and top with mascarpone cream.
