Chicken With Spicy Lentils

  1. To marinate chicken, combine yogurt, curry paste and chicken in a bowl. Cover and refrigerate 15 mins.
  2. Meanwhile, for the spicy lentils, heat oil in a large saucepan. Saute onion and garlic, until onion is soft. Add cumin seeds and cook, stirring, until fragrant. Stir in lentils, undrained tomatoes, stock and cilantro. Simmer, covered, stirring occasionally, about 25 mins or until lentils are tender and most of liquid is absorbed.
  3. Cook chicken in a frying pan, turning, until browned on both sides and cooked through. Serve with the lentils.
