Sweet And Sticky Ribs

  1. In a saucepan, combine ketchup, 1/2 cup water, Worcestershire sauce, brown sugar, spices, herbs and Tabasco. Simmer over medium-low heat for 30 mins, or until thickened.
  2. Rub racks generously with dry rub. Wrap in heavy duty foil. Place on a sheet pan and let marinate at room temperature for 1 hour.
  3. Oven method: Preheat oven to 300u0b0F. Bake for 2 hours. Uncover ribs and drain off juices. Brush with barbecue sauce and bake for another 1 hour, basting occasionally, or until meat is tender.
  4. Grill method: Preheat 2 grill burners to 275u0b0F. Place ribs away from heat source, close cover and cook for 1 hour 30 mins, turning once. Brush with barbecue sauce and cook for another 30 mins, or until meat is tender.
  5. Remove from heat, wrap in foil and let rest for 30 mins. Serve with additional sauce, garnished with radishes and celery leaves.
