Cherry Pie
- 2 (1 lb.) cans tart red cherries
- 3/4 c. sugar
- 3 1/2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/2 Tbsp. grated lemon peel (optional)
- 2 Tbsp. lemon juice
- few drops red food coloring
- 1 (9-inch) unbaked pie shell
- 1/2 c. all-purpose flour
- 1/2 c. sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. mace
- 1/3 c. butter
- Drain cherries.
- Reserve 1 1/4 cups liquid. Combine 3/4 cup sugar, cornstarch and salt. Add reserved liquid.
- Cook until thick, stirring constantly.
- Add cherries, lemon peel, lemon juice and food coloring.
- Pour into pastry shell. Combine flour, 1/2 cup sugar and spices.
- Cut in butter until crumbly. Sprinkle over cherries.
- Bake in a 400u0b0 oven about 30 minutes or until crust is brown. Serve warm.
