Coconut Mocha Bars
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 1 None egg, lightly beaten
- 1/2 cup all-purpose flour
- 1/4 cup self-rising flour
- 2 tbsp cocoa powder, plus extra, for dusting
- 1 cup shredded coconut
- None None Icing
- 2 tsp instant coffee, dissolved in 1 tsp warm water
- 1/2 cup powdered sugar, sifted
- 1 tsp butter
- None None grated chocolate, to serve
- Preheat oven to 350u0b0F. Lightly grease and line a 7x11 inch rimmed baking pan with parchment paper.
- In a large bowl, combine butter, sugar and egg. Add flour and cocoa powder. Fold in coconut. Transfer to prepared pan, smooth top and bake for 15-20 mins, until firm. Let cool completely in pan.
- Meanwhile, to make the icing, combine coffee, powdered sugar and butter. Add enough hot water to make a spreadable consistency. Spread over cake.
- Cut into squares. Serve dusted with cocoa powder and grated chocolate.
