Roast Duck With Marmalade And Pistachio Stuffing
- 6 slices linseed or multi-grain bread
- 4 slices bacon, chopped
- 1 None red onion, peeled and finely chopped
- 1/3 cup orange marmalade
- 1/3 cup unsalted pistachios, toasted and chopped
- 1 tbsp chopped fresh thyme leaves
- 4 lb oven-ready duck (or chicken)
- Preheat the oven to 400u0b0F. Remove the crusts from the bread and process to fine crumbs. Saute the bacon in a skillet on high for 3 mins. Add the onion, marmalade, pistachios and thyme. Cook for 3 mins. Stir in breadcrumbs. Season to taste.
- Trim, wash and dry duck. Spoon the stuffing into the cavity. Place the duck in a roasting tin, prick the skin with a skewer and rub with a little salt. Roast in the oven for 1 hour, or until juices run clear when the thickest part of one duck thigh is pierced with a skewer. Cover and leave to rest for 15-20 mins before serving.
