Iced Orange Cake
- 3 cups flour
- 1 1/2 cups granulated sugar
- 1/2 tsp baking soda
- 3 None eggs
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup buttermilk
- 2 None oranges, peel grated
- 1/4 cup orange juice
- None None FOR THE ORANGE ICING
- 1 1/2 cups powdered sugar, sifted
- 2 tbsp unsalted butter, softened
- 1 None orange, peel grated and 1 tbsp juice
- Preheat the oven to 325u0b0F. Grease and flour a 9-inch fluted tube pan.
- Sift flour, sugar, baking soda and a pinch of salt into a bowl. Mix eggs, butter, buttermilk and orange peel and juice in a medium bowl. Add to dry ingredients and slowly stir until combined. Spoon into prepared pan.
- Bake for 1 hour 10 mins, or until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
- For the icing, place powdered sugar in a heatproof bowl. Stir in butter and orange peel and juice. Place over a saucepan of simmering water and heat, stirring, for 1 min, until smooth. Spoon over cake. Let stand until icing is set.
