Roast Duck Sandwiches On Sesame Toast

  1. Pour the teriyaki sauce into a bowl over the duck, toss to coat and allow to marinate for 45 mins.
  2. Preheat the oven to 325u0b0F. Rub sauce into the duck with your hands, then place skin-side down in a cold saute pan. Place over high heat and cook for 2 mins on each side, taking care not to burn it. Transfer to a roasting pan and roast for 25 mins.
  3. In a bowl, beat the eggs and milk and season with salt and black pepper. Lay the bread side by side on a baking sheet and cover with the egg mixture. Bake for 15 mins.
  4. Sprinkle the bread on both sides with sesame seeds. Heat the ghee in batches in a large pan and toast the sesame bread until browned on both sides. Remove from the pan and keep warm.
  5. Remove the duck from the oven and allow to rest for 3 mins. Cut into thin slices. Arrange the duck on half the sesame toast slices, sprinkle on the spring onions, drizzle with the sweet and sour sauce and top with another slice of sesame toast.
