Baked Passionfruit Cheesecakes
- 9 oz graham crackers
- 7 tbsp butter, melted
- 1 lb cream cheese, at room temperature
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 None eggs
- 5 None passionfruit, pulp scooped out
- None None whipped cream, to serve
- Preheat oven to 325u0b0F. Line 10 recesses of a 12-cup muffin pan with paper liners.
- Process graham crackers in a food processor until finely crushed. Add butter and pulse to combine. Divide between paper liners and press firmly into bases. Chill.
- Meanwhile, beat cream cheese, sugar and vanilla until smooth. Add eggs, 1 at a time, beating well after each addition. Stir in 2/3 of the passionfruit pulp. Distribute between paper liners and bake for 25-30 mins, until just firm. Let cool slightly then chill in pan for 2 hours.
- Remove cheesecakes from pan. Drizzle with remaining passionfruit pulp and serve with whipped cream.
