Baked Passionfruit Cheesecakes

  1. Preheat oven to 325u0b0F. Line 10 recesses of a 12-cup muffin pan with paper liners.
  2. Process graham crackers in a food processor until finely crushed. Add butter and pulse to combine. Divide between paper liners and press firmly into bases. Chill.
  3. Meanwhile, beat cream cheese, sugar and vanilla until smooth. Add eggs, 1 at a time, beating well after each addition. Stir in 2/3 of the passionfruit pulp. Distribute between paper liners and bake for 25-30 mins, until just firm. Let cool slightly then chill in pan for 2 hours.
  4. Remove cheesecakes from pan. Drizzle with remaining passionfruit pulp and serve with whipped cream.
