Pasta Pot With Bacon And Creamy Herb Sauce
- 1/2 lb mushrooms, halved
- 5 oz cherry tomatoes, halved
- 1 None onion, peeled and finely chopped
- 2 tsp fresh thyme, stems removed, chopped
- 12 oz Rigatoni
- 1/4 lb bacon, cut into strips
- 4 oz cream cheese
- 3/4 cup vegetable stock
- Cook the pasta in boiling salted water according to the package directions.
- Cook the bacon in a skillet until it is crisp, add the onion and saute for 1 min. Add the mushrooms and cook for 4-5 mins. Add the tomatoes about 1 min before the end of cooking. Remove the vegetables and bacon and add the stock to the skillet. Bring it to a boil and stir in the cream cheese and most of the thyme. Season to taste and simmer for 2 mins. Drain the pasta and mix it with the vegetables, bacon and sauce. Serve garnished with the remaining thyme.
