Smoked Chicken And Berry Salad With Strawberry Vinaigrette
- 2 bunches asparagus, trimmed
- 1 lb smoked chicken breast, thinly sliced (or use roasted chicken breast)
- 2 bunches arugula, trimmed
- 8 oz strawberries, hulled and thinly sliced
- 1 cup blueberries
- 1/2 cup blackberries
- 1/2 cup raspberries
- 1/4 cup olive oil
- 2 tbsp cider vinegar
- 1 tsp grated orange peel
- Spray a grill pan or grill grates with no stick cooking spray. Heat the grill pan on high heat or preheat the grill to medium-high. Grill the asparagus 4-5 mins, turning until just tender. Cool slightly.
- In a large bowl, combine asparagus, chicken, arugula, half the strawberries and the remaining berries.
- For the strawberry vinaigrette, place remaining strawberries with all dressing ingredients in a food processor or blender. Process until smooth.
- Drizzle a little dressing over salad just before serving. Serve with extra dressing on the side.
