Smoked Chicken And Berry Salad With Strawberry Vinaigrette

  1. Spray a grill pan or grill grates with no stick cooking spray. Heat the grill pan on high heat or preheat the grill to medium-high. Grill the asparagus 4-5 mins, turning until just tender. Cool slightly.
  2. In a large bowl, combine asparagus, chicken, arugula, half the strawberries and the remaining berries.
  3. For the strawberry vinaigrette, place remaining strawberries with all dressing ingredients in a food processor or blender. Process until smooth.
  4. Drizzle a little dressing over salad just before serving. Serve with extra dressing on the side.
