Linguine With Moroccan Lamb Sauce
- 2 tsp olive oil
- 1 None small Spanish onion, chopped finely
- 2 cloves garlic, minced
- 18 oz ground lamb
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 2 tbsp tomato paste
- 2 (15 oz) cans crushed tomatoes
- 1 None large zucchini, chopped coarsely
- 2 tbsp fresh mint leaves, finely chopped
- 13.5 oz linguine or bucatini pasta
- Heat oil in a large saucepan over medium heat. Cook onion and garlic, stirring, until onion softens. Add lamb and cook, stirring, until browned. Add spices and cook, stirring, until fragrant.
- Add tomato paste, tomatoes and zucchini to pan. Bring to a boil. Reduce heat and simmer for 15 mins, or until sauce thickens slightly. Fold in mint.
- Meanwhile, cook pasta in boiling salted water until tender then drain. Serve pasta topped with sauce.
