Gluten-Free Fruit Pudding
- 2 cups golden raisins
- 1 1/2 cups chopped raisins
- 1/2 cup dried currants
- 1 1/2 cups chopped pitted dates
- 1/2 cup orange juice
- 2 tbsp honey
- 1 cup firmly packed brown sugar
- 12 tbsp (1 1/2 sticks) dairy-free margarine
- 1 cup soy flour
- 1 cup rice flour
- 1 tsp cream of tartar
- 1/2 tsp baking soda
- 2 tsp mixed spice, such as pumpkin pie spice
- 1 cup ground almonds
- Combine the fruit, 1 1/2 cups water, orange juice, honey, sugar and margarine in a large saucepan. Stir on medium heat, without boiling, until the margarine melts. Transfer the mixture to a large heatproof bowl; cool.
- Grease a 9-cup pudding bowl, suitable for steaming; line the bottom with parchment paper.
- Stir the sifted dry ingredients and almonds into the fruit mixture.
- Spoon the mixture into the pudding bowl. Cover with greased foil, then secure with a lid or kitchen string. Place the steamer in a large saucepan with enough boiling water to come halfway up the side of the steamer. Simmer, covered, for about 6 hours, replenishing the water as necessary to maintain the water level.
- Let the pudding stand in the bowl for 5 mins, then turn out onto a plate to serve.
