Chocolate Zucchini Cake
- 2 1/2 c. sifted flour
- 1/2 c. baking cocoa
- 1 tsp. soda
- 1 tsp. salt
- 1/2 c. butter
- 1/2 c. oil
- 1 3/4 c. sugar
- 1 tsp. vanilla
- 1/2 c. buttermilk
- 2 c. unpeeled, grated zucchini
- 1 (6 oz.) pkg. chocolate chips
- 3/4 c. nuts, chopped
- 2 eggs
- Sift first 4 ingredients; set aside.
- Cream butter, oil and sugar until light.
- On medium speed, beat eggs, one at a time, beating well after each addition.
- Blend in vanilla.
- Add dry ingredients alternately with buttermilk to creamed mixture.
- Beat well after each addition.
- Stir in zucchini.
- Pour in 13 x 9-inch pan.
- Sprinkle with chocolate chips and nuts.
- Bake at 325u0b0 for 55 minutes or until cake tests done.
