Passionfruit Jelly Candies
- 1/2 cup sugar
- 4 None passionfruit, pulp scooped out, strained for juice
- 3 tbsp powdered gelatin
- 3/4 cup water
- None None sugar, to coat jellies
- Sprinkle a little water in an 3 x 10 inch baking pan and set aside. Put sugar and passionfruit juice in a saucepan. Heat, stirring, until sugar dissolves. Reduce heat and simmer uncovered, without stirring, for 10 mins, until syrup thickens slightly and clears.
- Meanwhile, in a small bowl, sprinkle gelatin over 1/4 cup of water. Set aside for 5 mins, until gelatin softens and expands. Place bowl in container of hot water. Stir until gelatin melts. Whisk into passionfruit syrup. Set aside for 15 mins. Skim solids from surface.
- Pour into prepared pan. Cool to room temperature; cover. Chill for 2 hours, until firm.
- Cut jelly into 2 inch squares. Toss in sugar. Serve immediately.
