Apple Crumb Loaf
- 3 medium size tart apples
- 1 c. margarine
- 3/4 c. sugar
- 2 eggs
- 1 c. sour cream
- 2 2/3 c. sifted flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 4 tsp. cinnamon
- dash of nutmeg
- Quarter, core and peel apples.
- Cut into 1-inch cubes.
- Spread evenly on greased cookie sheet.
- Bake at 350u0b0 for 30 minutes until apples are tender but not mushy.
- Remove from pan and cool.
- Beat 1/2 cup margarine until creamy; add 1/2 cup sugar.
- Beat well.
- Add eggs, one at a time, beating well after each addition.
- Blend in sour cream.
- Sift together 2 cups flour, baking soda, baking powder, salt and 2 teaspoons cinnamon.
- Fold into margarine.
- Add apples, folding in gently.
- Pour half of the mixture into a greased, wax paper lined and greased again 9 x 5 x 3-inch loaf pan. Cut remaining margarine into remaining flour, sugar, cinnamon and nutmeg until crumblike.
- Sprinkle half of the crumb mixture over the batter; pour in remaining batter.
- Sprinkle with remaining crumb mixture.
- Bake at 350u0b0 for 50 to 60 minutes until browned, pulled away from the edges and a toothpick inserted near center has no sticky dough adhering to it.
- Cool in pan on rack 10 minutes. Carefully remove from pan.
