Apple Crumb Loaf

  1. Quarter, core and peel apples.
  2. Cut into 1-inch cubes.
  3. Spread evenly on greased cookie sheet.
  4. Bake at 350u0b0 for 30 minutes until apples are tender but not mushy.
  5. Remove from pan and cool.
  6. Beat 1/2 cup margarine until creamy; add 1/2 cup sugar.
  7. Beat well.
  8. Add eggs, one at a time, beating well after each addition.
  9. Blend in sour cream.
  10. Sift together 2 cups flour, baking soda, baking powder, salt and 2 teaspoons cinnamon.
  11. Fold into margarine.
  12. Add apples, folding in gently.
  13. Pour half of the mixture into a greased, wax paper lined and greased again 9 x 5 x 3-inch loaf pan. Cut remaining margarine into remaining flour, sugar, cinnamon and nutmeg until crumblike.
  14. Sprinkle half of the crumb mixture over the batter; pour in remaining batter.
  15. Sprinkle with remaining crumb mixture.
  16. Bake at 350u0b0 for 50 to 60 minutes until browned, pulled away from the edges and a toothpick inserted near center has no sticky dough adhering to it.
  17. Cool in pan on rack 10 minutes. Carefully remove from pan.
