Plum Crumble Squares
- 4 1/3 cups bread flour
- 2 tsp instant active dry yeast
- 1 1/3 cups sugar
- 2 sticks butter, cut into small pieces
- 3/4 cup warm milk
- 2 None medium eggs, beaten
- 1 None lemon, juice only
- 3 2/3 cups all-purpose flour
- 4 tbsp cocoa powder
- 2 lbs red plums, halved and stoned
- Place the bread flour and a pinch of salt in a large bowl and stir in the yeast and 1/2 cup of the sugar. Rub in 5 tbsp of the butter. Make a well in the center. Whisk together the warm milk, eggs and 2/3 of the lemon juice and pour into the well. Mix to a soft dough then turn the dough out onto a floured surface and knead for 7-8 mins until smooth and elastic. Wrap the dough in plastic wrap and chill in the fridge overnight.
- The next day, grease a 12 x 15 inch shallow baking tray or jelly roll pan. To make the crumble, mix the rest of the butter and lemon juice in a bowl with the remaining sugar. Divide the mixture evenly between two bowls and rub half of the flour into one bowl to make a crumbly mixture. Rub the rest of the flour and the cocoa powder into the second bowl.
- Preheat the oven to 350u0b0F. Briefly re-knead the chilled dough then roll out on a floured surface and use to line the prepared pan. Arrange the plums, cut-side up, on the dough then scatter over both crumble mixes. Bake for 30-40 mins until just golden brown. Serve warm or cold cut into squares.
