Salmon With Gnocchi In Lemon Sauce

  1. Season the salmon fillets with salt and freshly ground black pepper. Heat the oil in a large non-stick frying pan and fry the salmon fillets over a medium-high heat for 3-4 minutes on each side until just cooked through.
  2. Meanwhile, place the cream and stock in a pan and bring to a boil. Simmer for 5 minutes. Add the lemon juice and season to taste. Cook the gnocchi in a large pan of lightly salted boiling water for 2-3 minutes or according to the packet instructions. Drain well and add to the sauce with the chopped mint. Serve with the salmon, garnish with lemon wedges and mint sprigs.
