Honey-Lemon Chicken

  1. Preheat the oven to 400u0b0F. Place the lemon juice, butter and honey in a saucepan and heat gently. Stir in the garlic, then remove from the heat and set aside.
  2. Heat the oil in a large frying pan and fry the chicken, turning, until browned. Season with salt and black pepper and transfer to an ovenproof serving dish. Add the potatoes to the hot frying pan and fry for 2 mins, turning. Add them to the chicken, along with the lemon slices, then pour the honey mixture on top. Roast for 40-50 mins, until the juices run clear.
  3. While the chicken is cooking, boil the green beans in salted water for 5 mins. Drain and add to the chicken 5 mins before it is done cooking, then return to the oven. To serve, sprinkle with parsley and season with black pepper.
