Spicy Stuffed Peppers

  1. Preheat oven to 350u0b0F. Heat oil in a frying pan and saute onion for 2 mins. Add pistachios and curry powder and saute for 2 mins. Transfer to a bowl and let cool.
  2. Mix together sausage meat, egg, breadcrumbs, and parsley. Season. Place the peppers in a baking dish. Spoon the filling into the peppers, then sprinkle with mozzarella. Pour stock into the dish and bake in middle of oven for 35 mins.
  3. Garnish peppers with parsley and serve with farmhouse bread and herb butter (optional).
