Chili Con Carne
- 2 None red onions, peeled and chopped
- 2-3 cloves garlic, peeled and finely chopped
- 2 tbsp olive oil
- 750 g beef mince
- 1/2 tsp cayenne
- 1/2 tsp sweet paprika
- 2 cans (400g each) chopped tomatoes
- 400 g mixed beans and corn, drained
- 150 g pitted black olives, drained and sliced
- 1 pinch caster sugar
- 4 tbsp sour cream
- a few stems thyme
- Heat the oil in a large pan and cook the onion and garlic for 5 minutes. Add the beef and continue to cook for 5 minutes. Stir in the cayenne and paprika, then pour in the tomatoes with 1/2 cup water. Bring to a boil, turn down to a simmer and cook gently, covered, for 15-20 minutes.
- Add the beans, corn and olives and cook for 5 minutes. Add the sugar and season to taste.
- Serve topped with sour cream and garnished with thyme leaves.
