Salmon Patties With Caper Mayonnaise
- 4 None potatoes, peeled and halved or quartered
- 2 tbsp butter
- 1/3 cup fresh breadcrumbs
- 7 oz canned salmon, drained and flaked
- 4 None chopped green onions
- 1 None egg
- None None zest and juice of 1 lemon
- None None plain flour, for coating
- 1/4 cup vegetable oil
- None None salad, to serve
- None None Caper Mayonnaise
- 4 tbsp mayonnaise
- 1 tbsp sour cream
- 1 tbsp chopped capers
- None None small handful dill, chopped
- Cook potatoes in a saucepan of boiling water, 15-20 minutes, until tender. Drain well.
- Mash with butter until almost smooth. Season to taste. Add breadcrumbs, salmon, green onions, egg, lemon zest and juice. Mix well. Allow to cool slightly.
- To make the caper mayonnaise, mix mayonnaise, sour cream, chopped capers and chopped dill, until combined.
- Shape the potato mixture into 8 oval patties. Roll in flour, shaking off excess. Heat vegetable oil in a large frying pan on high.
- Cook patties in batches, 5-6 minutes each, turning once, until golden and heated through. Drain on paper towels.
- Serve salmon patties with caper mayonnaise, accompanied by salad, if you like.
