Cowboy Chili
- 8 lb. ground chuck
- 3 medium onions, diced
- 2 medium bell peppers, diced
- 2 (8-inch) stalks celery, diced
- 1 Tbsp. jalapeno pepper (optional)
- 2 (14 1/2 oz.) cans stewed tomatoes
- 16 oz. can tomato sauce
- 2 cans mushroom stems and pieces
- 16 oz. can tomato paste
- 2 (3 oz.) bottles chili powder
- 2 Tbsp. cumin
- 1 Tbsp. Tabasco sauce
- 3 bay leaves
- garlic salt to taste
- onion salt to taste
- salt and pepper to taste
- 4 oz. beer
- Saute onions, bell peppers, celery and jalapenos in a little oil.
- Add meat and brown.
- Mix in remaining ingredients and add enough water to cover top.
- Cook for 3 hours on low heat.
- This may be a bit more chili powder than you like.
- Taste for seasoning after the first bottle.
