Kale, Bacon And Feta Muffins
- 1 lb kale
- 2 strips smoked bacon, finely diced
- 1 None onion, finely diced
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1 2/3 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp olive oil
- 1/2 cup sour cream
- 2 None eggs, beaten
- 1/4 cup pine nuts
- 1/4 lb feta, crumbled
- Preheat oven to 400u0b0F. Line a 12 cup muffin pan with paper liners. Blanch kale in salted, boiling water for 4-5 min then drain and finely chop.
- Heat a frying pan over medium heat, add bacon and fry for 2-3 mins. Add onion and saute for 4-5 mins, until soft and golden. Add kale, cloves and allspice and season. Remove from heat and let cool slightly.
- Combine flour, baking powder, baking soda and 1-2 tsp salt. Add oil and sour cream then eggs and pine nuts. Fold in kale mixture then feta. Divide between muffin liners and bake for 20-25 mins until golden and springy to the touch. Enjoy hot or cold.
