Sumac Lamb With Couscous And Mint Yogurt
- 1 tbsp sumac
- 2 tbsp olive oil
- 8 None lamb chops
- 2 None zucchini, cut into 1/4 inch thick slices
- 7 oz instant couscous
- 3 tbsp butter
- 1 tbsp lemon zest
- 1/2 bunch fresh parsley, roughly chopped
- None None Mint Yogurt
- 3/4 cup Greek yogurt
- 1 clove garlic, minced
- 1/2 bunch fresh mint leaves, roughly chopped
- Preheat broiler. Combine sumac with 1 1/2 tbsp oil and season. Add lamb chops and toss well to coat. Cook for 4 mins per side for medium, or until cooked to your liking. Remove from heat. Let rest for 4-5 mins.
- Toss zucchini with remaining oil and season. Cook for 1-2 mins per side until tender. Set aside.
- Meanwhile, place couscous in large bowl. Top with butter and a generous pinch of salt. Pour 1/3 cup boiling water over top, cover with plastic wrap and set aside for 3 mins, or until water is absorbed. Fluff with a fork then mix in lemon zest, parsley and zucchini. Season.
- For mint yogurt, combine yogurt, garlic and mint. Season. Serve with lamb and couscous.
