Tandoori Chicken Sub
- 1/2 None rotisserie chicken, flesh removed
- 2 tbsp tandoori paste
- 2 tbsp plain yogurt, plus extra to serve
- 1/2 loaf French bread, halved horizontally
- 1/2 cup mango chutney
- 1 None onion, thinly sliced
- 12 None cherry tomatoes, quartered
- 2 oz mozzarella cheese, grated
- 2 None green onions, thinly sliced
- None None lemon wedges, to serve
- Preheat oven to 400u0b0F. Line a large baking tray with parchment paper.
- Combine chicken, tandoori paste and yogurt. Set aside to marinate for 20 mins.
- Open up baguette and place on prepared tray. Spread mango chutney over each 1/2. Top with sliced onion, chicken and cherry tomatoes. Sprinkle with mozzarella then bake for 10-15 mins, until bases are crisp and cheese has melted.
- Sprinkle with green onions. Serve with extra yogurt and lemon wedges.
