Ginger Chicken Patties With Peanut Sauce
- 1 tbsp peanut oil
- 2 tbsp grated ginger
- 1/2 tsp chili flakes
- 1 cup crunchy peanut butter
- 1 None lime, juiced
- 1 tsp sesame oil
- None None Ginger Chicken Patties
- 2 1/4 lb ground chicken
- 2 tsp grated ginger
- 1/4 tsp chili flakes
- 1 tbsp chopped fresh cilantro, plus extra to serve
- 1 tbsp soy sauce
- None None steamed rice, to serve
- To make the peanut sauce, heat peanut oil in a small saucepan over medium heat. Saute ginger and chili flakes for 2 mins. Stir in peanut butter and 2-3 tbsp water. Cook for 4 mins then stir in lime juice and sesame oil. Season to taste. Set aside and keep warm.
- In a large bowl, combine ground chicken, ginger, chili flakes, cilantro and soy sauce. Season then shape into 8 patties.
- Preheat oven to 350u0b0F. Line a baking tray with parchment paper. Heat a large, nonstick frying pan over high heat. Cook patties for 3-4 mins per side, until golden-brown. Transfer to prepared baking tray and bake for 8-10 mins, until cooked through.
- Arrange patties on warm serving plates along with steamed rice. Serve topped with peanut sauce and extra cilantro.
