Fried Artichoke Hearts

  1. Place the artichokes and lemon juice into a saucepan and add enough water to cover the artichokes. Remove the artichokes with a slotted spoon, add the salt to the lemon water and bring to a boil. Add the artichokes and simmer for 5 mins. Drain, refresh with cold water and cut into quarters.
  2. Heat the oil in a large frying pan and fry the artichokes over a medium heat for 3 mins. Add the garlic and cook for 2 mins. Add the vinegar and season with salt and black pepper. Sprinkle over the parsley and serve.
