Fish Pie With Cheesy Croutons

  1. Preheat oven to 350u0b0F. Place 6 shallow baking dishes (8.5 oz each) on a baking tray.
  2. Place potatoes in a microwave-safe bowl and cover with water. Microwave on HIGH (100%) for 8-10 mins, until tender. Drain. Mash with sour cream then mix in fish, celery, tomato, parsley, lemon zest and lemon juice. Season. Transfer to baking dishes.
  3. Arrange baguette slices over each dish, overlapping slightly. Brush with oil and sprinkle with cheese. Bake for 20-25 mins, until fish is cooked through and croutons are crisp and golden. Sprinkle with extra parsley to serve.
