Fish Pie With Cheesy Croutons
- 1 lb baby potatoes, chopped
- 1/4 cup sour cream
- 1 lb boneless firm white fish, skin removed, chopped
- 1 stalk celery, finely chopped
- 1 None tomato, chopped
- 1/3 cup fresh parsley, finely chopped + extra, to serve
- 1/2 None lemon, zested and juiced
- 1/2 None baguette, thinly sliced
- 1 tbsp olive oil
- 1/4 cup Parmesan cheese, finely grated
- Preheat oven to 350u0b0F. Place 6 shallow baking dishes (8.5 oz each) on a baking tray.
- Place potatoes in a microwave-safe bowl and cover with water. Microwave on HIGH (100%) for 8-10 mins, until tender. Drain. Mash with sour cream then mix in fish, celery, tomato, parsley, lemon zest and lemon juice. Season. Transfer to baking dishes.
- Arrange baguette slices over each dish, overlapping slightly. Brush with oil and sprinkle with cheese. Bake for 20-25 mins, until fish is cooked through and croutons are crisp and golden. Sprinkle with extra parsley to serve.
