Chorizo, Mushroom And Tomato Skewers
- 12 None button mushrooms
- 1/2 cup store-bought French dressing
- 4 None chorizo sausages, cut into 24 equal pieces
- 1/2 None loaf day-old white bread, crust removed, cut into 1 inch cubes
- 12 None cherry tomatoes
- None None Cooking oil spray
- None None Mixed greens, to serve
- Combine mushrooms and dressing in a medium bowl; toss to coat. Cover with plastic wrap; chill 15 mins to marinate.
- Drain mushrooms from dressing; reserve dressing.
- Thread chorizo, bread, tomato and mushrooms onto 12 skewers. Spray with oil.
- Preheat a grill or grill pan over moderate heat.
- Cook and turn skewers, in batches, basting with reserved dressing, 3-5 mins each batch or until golden and cooked.
- Place mixed greens on plates. Top with skewers, then serve immediately.
