Chorizo, Mushroom And Tomato Skewers

  1. Combine mushrooms and dressing in a medium bowl; toss to coat. Cover with plastic wrap; chill 15 mins to marinate.
  2. Drain mushrooms from dressing; reserve dressing.
  3. Thread chorizo, bread, tomato and mushrooms onto 12 skewers. Spray with oil.
  4. Preheat a grill or grill pan over moderate heat.
  5. Cook and turn skewers, in batches, basting with reserved dressing, 3-5 mins each batch or until golden and cooked.
  6. Place mixed greens on plates. Top with skewers, then serve immediately.
