San Choy Bow
- 1 tbsp peanut oil
- 1 tsp ginger, finely chopped
- 1 clove garlic, crushed
- 1 lb ground pork
- 6 None scallions, finely sliced, plus extra for garnish
- 1.5 oz ham, chopped
- 1.75 oz mushrooms, chopped
- 1.75 oz bamboo shoots
- 1 oz bean sprouts
- 2 tbsp dry sherry
- 1 tbsp soy sauce, plus extra to serve
- 1 tbsp oyster sauce
- 8 large leaves iceberg lettuce
- 1 None red chili, sliced (optional)
- Heat oil in a large frying pan on high. Saute ginger and garlic for 30 seconds, or until fragrant.
- Add pork and brown for 4-5 mins, breaking up the lumps with the back of a spoon as it cooks.
- Stir in scallions, ham, mushrooms, bamboo shoots and bean sprouts. Cook, stirring, for 3-4 mins.
- Stir in sherry and sauces. Spoon into lettuce leaves and sprinkled with extra scallion. Serve with extra soy sauce and sliced chili (if using).
