Anchovy, Broccoli And Walnut Penne
- 1 pkg (16 oz) penne pasta
- 2 tbsp oil
- 1 None onion, thinly sliced
- 1 can (2 oz) anchovies, undrained
- 4 cloves garlic, thinly sliced
- 1 lb broccoli florets, blanched in boiling water for 1 min
- 1/2 cup chopped walnuts
- None None Grated Parmesan cheese, to serve
- Cook the penne in a large saucepan of boiling water according to the package directions. Drain, reserving 1 cup of the cooking liquid. Return pasta to pan.
- Meanwhile, heat the oil in a large skillet on medium heat. Saute the onion for 2-3 mins, until tender. Increase the heat to high. Add the anchovies with oil and the garlic and cook, stirring, for 1-2 mins. Add broccoli and 1/2 cup of reserved liquid. Simmer for 1-2 mins, until broccoli is just tender.
- Add the broccoli mixture to the drained pasta along with the walnuts and remaining 1/2 cup reserved liquid. Toss to combine. Serve topped with Parmesan cheese.
