Anchovy, Broccoli And Walnut Penne

  1. Cook the penne in a large saucepan of boiling water according to the package directions. Drain, reserving 1 cup of the cooking liquid. Return pasta to pan.
  2. Meanwhile, heat the oil in a large skillet on medium heat. Saute the onion for 2-3 mins, until tender. Increase the heat to high. Add the anchovies with oil and the garlic and cook, stirring, for 1-2 mins. Add broccoli and 1/2 cup of reserved liquid. Simmer for 1-2 mins, until broccoli is just tender.
  3. Add the broccoli mixture to the drained pasta along with the walnuts and remaining 1/2 cup reserved liquid. Toss to combine. Serve topped with Parmesan cheese.
