Sweet And Sour Pork Roast
- 1 (5-6 lb) pork loin roast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup pineapple preserves
- 1/4 cup oyster sauce
- 3 tbsp rice vinegar
- 2 tbsp brown sugar
- 2 tsp minced garlic
- 1 1/2 cups broccoli florets
- 2 tbsp vegetable oil
- 3 None bell peppers, seeded and sliced into thin strips
- 1 None large red onion, sliced
- 1 cup fresh pineapple wedges
- 2 tbsp diced candied ginger
- Preheat oven to 450u0b0F. Season and sprinkle pork roast with garlic powder and onion powder. Roast for 10 mins. Reduce heat to 325u0b0F and roast for 1 hour.
- Meanwhile, whisk together pineapple preserves, oyster sauce, rice vinegar, brown sugar and garlic. Brush 1/2 of the glaze over pork and roast until a thermometer inserted in the thickest part reads 145u0b0F. Remove from oven and let rest for 20 mins.
- Blanch broccoli in boiling salted water for 2 mins. Drain.
- Heat oil in a large frying pan over medium heat. Add vegetables and stir-fry for 3 mins. Add remaining glaze and toss to coat. Serve with roast pork, garnished with pineapple wedges and candied ginger.
