Marinated Chicken With Chili Broccoli
- 4 tbsp soy sauce
- 1 clove garlic, peeled and finely chopped
- 4 tbsp honey
- 1 None lime, juiced
- 1 1/3 lb chicken breast, cut into cubes
- 3/4 lb broccoli, broken into florets
- 2 tbsp peanut oil
- 6 sprigs fresh cilantro, finely chopped, plus extra for garnish
- 1 None small red chili, deseeded and sliced into rings
- In a bowl, mix the soy sauce, garlic, honey and lime juice. Add the chicken and allow to marinate for 30 mins.
- Cook the broccoli in boiling salted water for 5 mins. Drain and set aside.
- Heat 1 tbsp peanut oil in a non-stick saucepan. Take the chicken from the marinade and cook for 2 mins, turning. Add the marinade and 2 tbsp water, cover and simmer for 6 mins, adding another 1 tbsp water if necessary. Add the cilantro and remove from the heat.
- Heat 1 tbsp oil in a separate pan and cook the broccoli and chili for 3 mins. Season with salt and black pepper. Arrange the chicken and broccoli on plates and garnish with cilantro.
