Chicken Breast With Tomato Curry And Noodles

  1. Heat 1 tbsp oil in a pan and gently saute the chicken for about 10 mins, turning frequently. Meanwhile, cook the pasta in boiling salted water according to the package instructions.
  2. For the sauce, heat 1 tbsp oil and saute the onion and banana until the onion is translucent. Add the flour and curry powder and cook for 1 min. Add the tomato paste, stock and apple juice stirring. Bring to a boil then simmer for 5 mins, stirring occasionally. Season.
  3. Drain the noodles in a colander and add to the sauce. Cut the chicken into slices. Arrange the pasta and meat in a shallow bowl or plate and garnish with basil.
